Awesome Knife

| I love this knife! We love to make fresh salsa and you know how difficult it can be to cut tomatoes with a knife that won't stay sharp. Not the case with this knife! It stays razor sharp and makes cutting tomatoes, peppers, everything so much easier. |

I received a 5" Kyocera ceramic knife in 2000 as a gift. It immediately became the 'go to' knife in our kitchen. It held it's razor sharp edge for what felt like years. Even today my husband and I still 'steal' it from one another when we are cooking dinner together. It's never been in the dishwasher just wipe it off with a sponge and put it back in the knife block.
Yes the blade is brittle and after years of dropping it in the sink the tip finally did break off, it's got some chips along the edge and it can no longer slice a tomato just by looking at it. Truly, it was so sharp when it was new that I would cut my hand without even realizing it. As a user you do need to relearn blade safety (I once accidentally sliced through a sponge when cleaning it).
Even with the chips and dings it's still sharper than many of my steal bladed knives. I know I can send it to Kyocera for sharpening but honestly I've never been wiling to part with it long enough to send it in. Finally I am breaking down and buying a new one. I truly LOVE this knife. |

Kyocera sharpening tool for ceramic blades

Kyocera does make a sharpening tool for its ceramic bladed knives. It is not, however, exported to the United States -- or anywhere else, as far as I could determine. Nevertheless, it is available from a few independent kitchen equipment shops here in the U.S., directly from Japan via mail order, and from online stores run by small, mom and pop-sized importers/distributors who keep limited stock on hand.
A web search for ' Kyocera "diamond sharpener" ' will turn up some of these hard-to-find providers, although most of the results from that search will refer to Kyocera's diamond-impregnated ceramic sharpener for steel knife blades. (No doubt others will find a more efficient search phrase.)

Now, three opinions I can't keep to myself: First, the item is on the low end of the quality curve, as might be guessed when one discovers it comes in a plastic see-through clamshell pack. In one word: flimsy. Secondly, I believe it remains a Japan only product because it is sold there at an very low price. That is appropriate for a tool which can be used only a limited number of times before it wears out. Import duties and shipping costs raise its cost considerably elsewhere -- although it's still relatively inexpensive
On the other hand, it does work, and those who do not prepare meals at home nearly every day of the year will probably never need to use it often enough to affect its usability.
Lastly, I'd suggest that only sharpening mavens who want to increase their expertise should purchase one; that's what made me do it. Others are better off sending their Kyocera knives to professional sharpeners. |

| I'm extremely happy with this knife. It is amazingly sharp and light weight making it easy to use. It has been an adjustment to make sure I don't abuse it by twisting or cutting on an inappropriate surface, but the results are wonderful. |
